Vazhuthananga/ Kathirikai/ Vankaya/ Badanekai/ Brinjal fry

There might have been occasions were your craved for some yummy brinjal fry and then you dumped that craving thoughts thinking that it’s too difficult, too tough. Not anymore. Following are some simple steps to folllow to make some of those lip-smacking brinjal fries in the easiest way possible.

Let’s get started with the ingredients.
Brinjal
Oil
Turmeric Powder
Chilly Powder
Salt
Crushed Pepper

I have taken 2 medium sized ‘Brinjal Striped’ which is a striped variety of brinjal and has white-purple stripes on its skin. In addition to many vitamins, it is low in calories and rich in dietary fiber.

Now remove the stalk (the top portion) and place it in a bowl of water with a pinch of salt added to it. (Now that extra piece ,it’s because I cut the stalk a little more and I didn’t want to waste that piece. Human error 🙂 )

Using a knife, slice the brinjals into small pieces that’s round and thin. Take your time in getting the correct thickness.

Next step is to make the marinate mixture. Add red chilly powder, turmeric, salt, crushed pepper along with some oil. Mix well so that you get a paste.

Apply the marinate paste generously on the brinjal pieces. Make sure both sides of all the pieces are coated. Leave it for 15 minutes.

In a frying pan, add some oil. Spread the brinjal pieces evenly so that none of them is above another piece.

Fry them on both sides till it browns.

Serve with rice or fries.
